Morning Muffins

These “Out-the-door Chia Power Doughnuts,” which we adapted as muffins, were a delightful office snack this week. We got this recipe from The Oh She Glows Cookbook, a favorite of ours for unique but uncomplicated vegan recipes.

Regardless of their geometry, they’re great as a post-workout breakfast, especially after a nutrient-boasting smoothie and a hot cup of coffee. That’s how Suzan has been enjoying them. Dave has his smoothie/muffin/coffee trio while practicing German with Rosetta Stone.

The main ingredient here is chia seeds, which provide a great serving of omega-3 fatty acids, boosting brain power and providing some good energy for the day ahead.
